{"id":2194,"date":"2025-08-19T23:47:48","date_gmt":"2025-08-20T03:47:48","guid":{"rendered":"https:\/\/fraisebec.dev.webloft.cloud\/recette\/medaillons-de-porc-aux-framboises\/"},"modified":"2025-09-03T17:51:45","modified_gmt":"2025-09-03T21:51:45","slug":"raspberry-pork-medallions","status":"publish","type":"wl_recettes","link":"https:\/\/fraisebec.com\/en\/recipe\/raspberry-pork-medallions\/","title":{"rendered":"Raspberry pork medallions"},"content":{"rendered":"<h3>INGREDIENTS<\/h3>\n<ul id=\"list\">\n<li>2 pork tenderloins<\/li>\n<li>Flour<\/li>\n<li>15 ml (1 tablespoon) of olive oil<\/li>\n<li>30 ml (2 tablespoons) of butter<\/li>\n<li>1 onion, finely chopped<\/li>\n<li>1 garlic clove finely chopped<\/li>\n<li>5 ml (1 teaspoon) of honey<\/li>\n<li>5 ml (1 teaspoon) of raspberry vinegar<\/li>\n<li>125 ml (1\/2 cup) of chicken broth<\/li>\n<li>250 ml (1 cup) of fresh raspberries<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<h3>PREPARATION<\/h3>\n<p><strong>1.<\/strong> Place the grill in the center of the oven. Preheat the oven to 180 \u00b0C (350 \u00b0F).<\/p>\n<p><strong>2.<\/strong> Slice each tenderloin into 6 medallions. Slightly flatten and flour each medallion.<\/p>\n<p><strong>3.<\/strong> In an ovenproof skillet, heat the oil and butter. Add the medallions and brown them for about 1 minute on each side. Add salt and pepper. Save for later.<\/p>\n<p><strong>4.<\/strong> In the same skillet, soften the onion and garlic. Add honey and cook for 1 minute. Deglaze with the vinegar. Add the broth and 125 ml (1\/2 cup) of raspberries. Cook 1 to 2 minutes.<\/p>\n<p><strong>5.<\/strong> Replace the medallions in the pan. Cook in the oven for about 10 minutes. Add the remaining raspberries. Adjust the seasoning.<\/p>\n<p><strong>6.<\/strong> While serving, add some sauce on the medallions.
