Raspberry and kefir muffins

INGREDIENTS

  • 430 ml (1 3/4 cup) of all-purpose unbleached floor
  • 150 ml (2/3 cup) of brown sugar
  • 15 ml (1 tablespoon) of baking powder
  • 1 pinch of salt
  • 250 ml (1 cup) of nature kefir or plain yogurt
  • 60 ml (1/4 cup) of vegetal oil
  • 60 ml (1/4 cup) of All-Bran cereals
  • 1 egg, ligthly beaten
  • 375 ml (1 1/2 cup) of fresh or frozen raspberries
  • 30 ml (2 tablespoon) of granulated sugar

PREPARATION

1. Place the grill in the center of the oven. Preheat the oven to 190 °C (375 °F). Place paper liners in 12 muffin molds.

2. In a large bowl, mix the flour, brown sugar, baking powder and sugar. Save for later.

3. In another bowl, mix the kefir, oil, cereals and egg. Pour on the dry ingredients and gently mix with a spatula until the flour is moistened.

4. Add raspberries and gently mix.

5. Divide the dough into the molds. Sprinkle with sugar. Bake for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean. Remove from pan and let cool.
